Easy Vegan Snacks

When you’re vegan or vegetarian or just looking for some cruelty free snack options, it can be quite difficult to avoid the typical bag of chips or pack of cookies. That’s why we’ve compiled a list of great vegan snack options that can be easily pulled out whenever you’re feeling peckish.

Chocolate brownies

Ingredients:

2 cups all-purpose flour

1 cup brown sugar

1 cup white sugar

1 teaspoon baking powder

¾ cup cocoa powder (unsweetened)

1 teaspoon salt

1 cup vegetable oil

1 teaspoon vanilla extract

Method:

  1. Stir together flour, sugar, baking powder, cocoa powder and salt. Slowly add vegetable oil, vanilla extract and water and mix well.
  2. Spread mixture evenly in greased pan and bake for 30-35 minutes at 350 degrees Fahrenheit
  3. Allow to cool and then cut into squares

These brownies are both yummy and filling and a great option for a quick bite. They’re also easy to make which makes them all the more desirable.

Carrot bites

Ingredients:

1 carrot

3 tablespoons olive oil

oregano

paprika

Method:

  1. Slice carrots (use a grater for the best results) and place in a bowl
  2. Add olive oil as well as salt, oregano and paprika to taste. Mix well
  3. Bake at 425 degrees Fahrenheit for 10-15 minutes
  4. Allow to cool and serve

Carrot bites are a healthier, vegan alternative to most processed chips and not to mention, simple to make.

Sweet potato fries

Ingredients:

1 sweet potato

Salt

Pepper flakes

Basil

2 tablespoons olive oil

Method:

  1. Slice sweet potato and place in bowl
  2. Add salt, pepper flakes, basil and olive oil. Mix well
  3. Bake at 425 degrees Fahrenheit for 10-15 minutes

These sweet potato fries are quick and simple to make as well as healthier than traditional French fries. They’re also delicious!

Fruit bowl

Ingredients:

Any fruits of your choice. I used plums, cherries and pomerac. Fruits are always a great tasting and refreshing options for vegans and meat eaters alike. You can easily add nuts or granola to add a little extra protein to this already nutritious snack.

Mango Chia Pudding

Ingredients:
2 cups coconut milk

3/4 cups ripe mango pieces

1/2 cups chia seeds

Method:

1. Pour mango and coconut milk into a blender and blend until smooth.                        2. Next add the chia seeds and blend for a few seconds to combine.                              3.Place in a sealed container and leave in the fridge overnight to set.

And that’s it, delicious protein rich and healthy pudding! Variations can easily be made, my favorite chocolate chia pudding can be made by swapping the mango with a quarter cup of cocoa powder and a quarter cup of any liquid sweetener like maple syrup.
